Sleeping at the Train Station

Mimi made Rocco the cutest sheet set. It has one of Rocco's favorite things on it - Trains. Thomas the Trains no less. Rocco likes to name off all the trains on there. It is fun to look at the trains with the flashlight before going to bed.

Mom and Son Day

Rocco and me had a special Mom and Son day at Gilroy Gardens the other week. I wanted to take him there during the week so we didn't spend the whole day in lines. We went on a Thursday and the park was fun and the lines were no where to be found. It was great. Just off one ride and on another.

We hit up many rides, ate lunch, played in the water and oh the best part of the day, Rocco almost did his first karaoke session. We were eating lunch and just happened to get there right as the vegetables, yes garlic included, were putting on a show. After that the park was starting a new karaoke program. They invited different kids to sign 5 different songs. They asked Rocco if he wanted to sing his ABC's. He said yes!

They also asked him what his favorite ride was, he said the train. His favorite food, he of course said Mac and Cheese. The show had about 20 minutes before they started. During that time Rocco was singing his ABC's to all the workers there and running around dancing. I thought for sure he was going to nail it. Well, lets just say…. cat got your tongue?

The best part for Rocco was riding on the train twice, driving the cars and playing in the water. I love the last two pictures of him. He is driving the car and he thought it was the coolest thing.

It was a great day. I did miss the nap window, he was too tired to sleep on the way home but he did finally crash in my arms on the coach. It was a wonderful day with my Rocco!

Summer Check List! - Farmer's Market

I don't have any pictures of our fruits and vegetables, but I do have a picture of Rocco's first "face painting". The lady didn't do it on the face though, she decided the arm would be a good place for the car. Can't wait for the first spiderman face painting. But if memory servers me right, I think she wanted 16 dollars for the face. I am glad Rocco choose the 8 dollar car.

Summer Check List! - Music in the Park

We went to music in the park a couple of times in Campbell this year. The first time we ate dinner on the blanket but there was so much going on, Rocco didn't want to sit and eat. The next time we ate dinner at home and enjoyed our fruit before the music started.

One Thursday we met up with Allison and her family from daycare. Rocco and Allison enjoyed running around and dancing together. It was so cute to watch them dancing together.

Happy Birthday Mimi

Last month it was Mimi's Birthday. What better place to spend it than in her beautiful yard. The sun was shining, the plants were in bloom and pizza on the grass made for a wonderful day. Rocco helped Mimi cuts some of her dalia's for the table and boy are they beautiful.

Rocco had fun watching Pop snap all the bee's with his super charged racquet. He also loved to play in the water and eat as many goose berries as he could. This is something special that Rocco, Mimi and Pop do when he is over there. They sit on the wall and open up the wrappers on the goose berries and enjoy the sweetness together. Another spot that is special at Mimi and Pop's is the rocking chair. This is Rocco's great great grandpa's rocking chair. Mimi says Rocco loves to sit in it.

We ended the day with burnt almond cake from Dick's bakery. We sang Happy Birthday and Rocco even let Mimi have a lick of frosting from her own candles.

Pecan Waffles - YUMMY!

Jared said he wanted waffles this morning. I went on the hunt for a new recipe that included things I already had in the kitchen. No buttermilk in the fridge, that is ok, I found this great easy recipe and boy were they good. Both Rocco and Jared give this a thumbs up. I want to make these for my Mom the next time she is in town. She likes pecans and these waffles are sprinkled with them. Come and get it Mom!

Light 'n Crispy Pecan Waffles

2 eggs, separated
2 cups Milk
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1/3 cup canola or other vegetable oil
1 teaspoon vanilla extract
1/4 cup finely chopped pecans

Preheat waffle maker.

In a medium bowl, beat egg whites until stiff. Set aside.

Put egg yolks, milk, flour, baking powder, salt, oil and vanilla extract in a large mixer bowl. Beat until smooth. Gently fold in beaten egg whites.

Pour 1/2 cup batter into waffle maker. Sprinkle with 1 tablespoon chopped pecans. Close waffle maker and bake until golden, 2-1/2 to 3 minutes.

Summer List Check! - Roaring Camp

This was a day Rocco loved, loved, loved. This train is no little train. It is the real deal and it was great. We called the train Hiro since it was black like Hiro on Thomas. We had some time to kill before the train came so we shopped for some souvenirs, ate some lunch and listened to the grandpa singing and playing guitar.

Then it was time to get great seats right behind the engine. We were so close we could feel the water from the steam engine. It was great. The ride was just over an hour and it stopped half way through so you can get a look at the redwoods up close. Jared and I reminisced about our days of when we lived in Boulder Creek.

I love the picture below of Rocco with his hands over his face. This is when he noticed the train was going on another run after us and we were not on it. Also, love the classic face in the hole picture. Looking at this now, I should have asked someone to take our picture so I could of have been in the girl slot.

This was a great family day. I love Jared and Rocco and love when we do fun outdoor activities.
