Sun, Sand and The Beach

We went to the beach on Saturday. It was a beautiful day and we had a great time playing in the sand, getting our feet wet and having lunch with Mimi and Pop.

My Family Loves Me

Here are some pictures from our trip to Sacramento a few weeks ago. We had breakfast with Great Nana and then went to a skate park to meet up with my Auntie, Uncle Stephen and Cousin Austin.

Mommy and Me Trip

I took my first solo trip with Rocco two weeks ago. We went down to see my Dad, Marti, sister Stephanie and her kids Faith, Austin, my cousin Sharon and her girls Lauren and Natalie.

Rocco did great on both flights. The flight each way is only one hour, so I knew I wasn't setting myself up for something that might not be that fun. Rocco had fun sharing cheerios with the girl behind us, tell her Dad he was wearing a hat, walking half the length of the airport pushing his own stroller while all the people passed us by and playing hide-n-seek with another girl while waiting for the plane to arrive.

This time down there, Rocco had no problems being loved by everyone. When we went down a few months ago for my Dad's wedding, he cried anytime someone wanted to hold him. But this time was great. Lauren and Natalie were so fun to watch with Rocco. They feed him dinner, spent some time on the swing and played for hours with him.

Rocco sat on Grandpa's lap as he started his 57 chevy and we took a long walk around the block. When Rocco wasn't in the wagon, Spike got a free ride. Over all it was a wonderful trip. I am glad we went down to see the family. Even though there was nothing on the agenda, it is spending time and making memories that count. I love my family and want Rocco to have the same joy in his heart when he thinks about his time growing up.

Parmesan Crusted Fish with Lemon Dill Sauce

Made this new recipe the other day. It was really simple and once again yummy. The dill sauce was easy to make and both items only had about 3 ingredients each. For the choice of fish, I used red snapper. Rocco ate it all up. I had to make him seconds. This is something I will be making again. You should try it.

Parmesan Crusted Fish (Serves 4)

1/4 Cup Parmesan Cheese
1/4 Cup Bread Crumbs
1/2 Tsp Salt
4 Fish Fillets (you could use Tilapia, Red Snapper, Halibut, Barramundi or any white flakey fish)
Olive or Canola Oil Spray (I use Spectrum Canola Spray)

1. Preheat oven to 400 degrees.
2. Mix the parmesan cheese, bread crumbs and salt in bowl or on a plate.
3. Coat each fish fillet in the cheese mixture.
4. Place on a spray-lined baking rack on top of a cookie sheet, coat the fish with spray and bake for 12-15 minutes, depending on the thickness of the fish (about 12 minutes for tilapia and 15 minutes for something thicker like halibut).
5. Serve with lemon and dill dipping sauce.

Lemon & Dill Dipping Sauce

1/2 Cup Plain Yogurt
Juice of 1/2 a Lemon
2 Tsp Fresh Dill or 1 Tsp Dried Dill
Pinch of Salt

1. Place all the ingredients in a bowl and stir to combine.
2. Serve.

I'm Walkin', Yes Indeed

I'm walkin', yes indeed, and I'm talkin' bout you and me. This song comes to my mind when I have the news to share that Rocco took his first steps yesterday.

Rocco was hanging out on my lap, one of his favorite places lately (mine or Jared's) waiting for Jared to come home from work. Rocco hears the keys at the door and say's "what's that?" Then Jared walks through the door and I stand Rocco up and next thing you know.... takes 4 steps straight to Jared.

Jared said, "when did he learn to do that?" I said "Right now!!"

Later that night - 6 steps, 7 steps all around the house. Working on getting this on video.

Easter 2010

I was home sick on Easter and missed out on all the fun. But thank goodness for photos to show me what I missed.

Rocco had his first official egg hunt at Pop and Mimi's house. Although the bright color eggs were not as interesting as Pop's yard lights.

Grandpa Makes Me Laugh

This is a great clip of Rocco laughing and hanging out with Grandpa John. Check out his expression around 1:20. Got to love it. Grandpa John comes over at least once a week and Rocco really enjoys playing with him.

Big Helper

Rocco was helping Jared put away the groceries today. Well not really helping put them away, but pulling items out as Jared was putting them in. I wonder when Jared will teach Rocco how to stock the fridge with all the items facing front and everything right to the edge. Or maybe I will teach him about the fridge ghost that goes in after you to ensure that everything is in place.

14 Months Old

Rocco is 14 months old today. His little personality is shining bright more and more each day.
  • He does this cute head nod when he talks, kind of like when you would say What's Up.
  • He is getting really good at walking with holding only one hand. Those first steps are soon to come.
  • His new words are Hot, Hat and Up
  • He is starting to make the cutest facial expressions while he talks. He says a lot with his eyes.
  • He gave his first kiss to a girl at daycare. He even did it right in front of me.
  • He has 10 teeth and when I say lets brush your teeth he says "AAHH" every time.
  • We moved his bedtime out an hour to 7:30.
  • He uses his fork all by himself to pick up fruit.
We love our Rocco Jay. Thanks for the daily kisses, hugs and smiles.
